By the time I was done with the wilted salad my teeth had that familiar spinach fuzz going on. I adore late fall and winter grown spinach. It has such a substantial "green" taste without the undertones of bitters that brassicas can get. I know that the fresh spinach I buy has quite a bite to it, but my home grown less so.
