  1. Pie. Then a very distant second would be ravioli, but I'm usually too lazy to make it. I did a couple of times last year, so maybe I'll do it again this year. Pie is easy to make though and I often make it without crust, so would probably be a squash custard then? Or maybe a casserole? Without the crust and the squash already pureed and frozen, it takes less than five minutes to make. I also like it in my burritos. Black beans and squash go very well together.

  2. Wow! Such a beautiful Marina!! It's so picture perfect it's like a work of art! Squash is so versitle and there are so many great things to make with it. I've been making a lot different gnocchi recipes with my harvest and freezing some of it too for the holidays. You're so creative it will be fun to see what you create with it.

  3. I'm planning to make squash/pumpkin soup with mussels when we have friends for supper on Saturday. We have six large pumpkins like this and three large butternut squashes which are too big to eat all at once so I think I'll roast them and puree them and then freeze them.

  4. I love to add squash to fresh and quick past dishes. Great color/texture contrast. Some arugula, tomatoes, shrimp, garlic, squash, pasta, with some chicken broth to loosen it up and a touch of lemon juice (and zest) to brighten it up- heaven!

  7. Daphne, I forgot about squash custard. I do the same thing, bake the pie filling without the crust. And beans and squash sound great, a variation on my lentils and squash but with Mexican seasonings.

  8. Oh. Wow that looks so tasty, I wish it was proper pumpkin time here in Oz! I love pumpkin and coconut cream brulee (google should find a tonne of recipes) I am going to adapt the recipe to make an icecream out of it. It's kind of thai style and sooooooo delicious. Also pumpkin, coconut creme, coriander and chilli soup is good. Enjoy!

  12. Very nice squash, I love the squash ravioli with brown butter and sage recipe and hope I get a chance to try it.

    Also, I wanted to thank you for turning me onto Piracaba broccoli. I grew two this year and they are still putting out nice little heads for us in a year that the other varieties I grew did not do so well...I diced some up to top tonights salad.:)

  13. That is a gorgeous squash - just shouts out "FALL IS HERE"!

    My favorite is just baked squash with butter and a drizzle of honey or brown sugar. I also love squash and bean soup as well.

  14. I just love pumpkin (squash) roasted with potatoes, garlic, and parsnips and served with roast lamb and a yummy gravy! Good luck with finding things you like.

  15. So far I like stuffed baked squash. Alton Brown has a good recipe. Next on my agenda is the Savory Feta pumpkin muffins on 101 cookbooks. I was given a 20 pound banana squash from a neighbor and I'm looking for ideas myself.
